Chicken Spaghetti Casserole

It’s Autumn in the Blue Ridge Mountains, and the cooler air, mountain breezes, and fall colors are coming into play, making comfort food a necessary staple for your family, which brings me to this casserole. There are a few people I know who refuse to eat a casserole. If they had any idea what they were missing, they’d change their minds. I love casseroles. I love finding new and delicious casserole recipes that are sure to please, and this comfort casserole has definitely made a permanent place on our family’s dinner table. Thank you Ree!

I subscribe to The Pioneer Woman. Ree Drummond has been a blogging friend since 2008, and her recipes are fabulous, as is everything else in her life. Ree has truly created her brand with dedication, devotion to family and friends, and keeping it “real.” She recently shared this casserole recipe and we tried it. Fantastic! I had to pause the movie we were watching 3 weeks ago to go back for seconds. The next day … we were in leftover heaven. Two weeks later, we made this recipe again, only with a few minor changes which I will share with you.

As for the changes we made to the recipe the second time around … we did not sprinkle shredded cheddar cheese across the top as there was cheese already mixed into the recipe; and, we used 2 roaster chickens from our local Ingles grocery store instead of cooking the chicken from scratch. We also added more chicken to the recipe.

Oh. My. Goodness. Fabulous!

Next time we make this, I think I will brown some crushed crackers in butter and put that on top. Hey! It’s a casserole! Roll with it!
